I prefer guns (mostly for safe pve purposes [and maybe some pvp with rules {quantum armor replaced with MPS}], if we dont want to lose health as no natural regen)

If those GT villagers had a special house, with basic steam age machinery (just the boiler, a bronze pipe and a random steam machine) and a chest with basic bronze tools. The villager would sell bronze and schematics which are used for special upgrades on various tiers of machinery. For example an energy reduction (random number between 5 to 15%) on electric compressors or a speed boost (5-15%)for a steam macerator...

There is no more refined iron. Several recipes and other things have changed since experimental versions. If you properly install NEI you will see the new recipes.

If your still taking mod sugestions, a mod I found the other day might be good as a combat oriented mod. Pretty basic as it really only adds in one thing and one thing only. Keyblades, lots and lots of Keyblades
The mod itself is Kingdom Keys ( http://www.minecraftforum.net/topic/1866697-…-114-keyblades/ ) its still in 1.6.4 but according to the thread, it is being worked on for 1.7. I'm still testing it myself but if you plan to have a PvP portion of your world...
From what i could notice, that mod is trying to add Kingdom Hearts to minecraft.

What do you mean?
That GregTech is enough to keep him busy for a very long time.
You should focus on only one mod in my opinion (the one you like best to work) and then add new content for it. -
Fancy, but expected bug with IC² and SM (StarMiner), quantum jetpack and quantum jump always propels you on y axis, regardless of gravity orientation.
Quantum jumping causes you to bounce sideways for example...Quantum speed (leggings) is working fine.

My guess is that Extra Utilities got access to a filter item with a stacksize of 0 (same as 111 of NEI) inside the barrel.

Edit: "finished" lighting, i wish i could cover redstone lamps with nether quartz plates to disguise them as quartz blocks.

Indeed GT is, but I recommend to install it when your server updates to 1.7.
