I had a full loaded MFE connected over Glass Fibre to another MFE so why get the MFE destroyed also Glass Fibre?
MFE has only 128EU/t and the Cable can hold up to 512EU/p.

... You probably forgot to tell us something, since a MFE can't blow another MFE (because of both (in/out)puting 128EU/p.

Can you see that MV transformer in your screenshot?
It is redstoned, thus taking MV from the goldwire and outputting HV in the glass fiber line.
No... its taking energy from glas fibre to gold cable..... take a closer look.

Doesn't matter, its redstoned, the energy flow is inverted, thats why it blew your mfe.
(Up to MV) 1 dot -> 3 dot (HV)
Tip : Always use glass fiber, never run redstone close to transformers, use MFSUs, always run your stuff on HV (transformer upgrades).
But the Energy goes only in one direction impossible?
So the MV Transformer takes only energy not output them to the MFE so i still dont know how could this happen.
BTW: at the Gold cable is no energy it gets powered from the transformer. (electric fance)
The transformer has a little internal buffer which may hurt when it gets inverted
