A little guide for anybody else who encounters my problem:
1. Remove the old IC2 folders from Railcraft and Thaumcraft
2. Put a "z" at the beginning of Industrial Craft's name in the mods folder so that it loads last
3. Remove the Railcraft plugin for NEI (it crashes minecraft since it looks for missing info)
4. Profit!
Should I just remove the IC2 folders from all of my mods except IC2 itself?

Consider using the program MultiMC. It has a Mac client and is extremely useful for installing mods. It is what I use (on a Mac) and I have everything up and running aside from a slight bug with crops. Also, use Direwolf20's video of his mod installation to get the general idea behind where to put what.

Delete the IC²-Folder in Railcraft, it contains an old IC²-API for 1.2.4, which conflicts with your 1.2.5 IC².
I dont know how i got it running without deleting it, but i think i just installed all in the right order so that the 1.2.5-IC² overwrites the old API's.
Yeah, I tried that except then I could not even get Minecraft to load. I would get the mod error screen as it was booting between the "Mojang" screen and the main menu. Any ideas on how to fix that?
As the title says, I am having Minecraft crash every time I place a seed into my crop blocks. The error report is below.
